Chicken Enchilada Recipe

This is a Tex-Mex casserole eaten so quickly. It is easy to make small. It mounts as a plate of lasagna. Only difference is that we use corn tortillas.

Ingredients:
* 10-7 inch corn tortillas
* 1 pound chicken, cooked and crumbled
* 1 pounds Cheddar cheese, grated
* 1 point. Cream
* 1 / 2 cup chicken broth
* 1 package taco seasoning
1 cup mayonnaise.
* 1 / 4 chopped green onions (garnish)
* 1 can Rotel, drained (garnish)
Instructions:
1. Preheat oven to 350
2. Cook chicken chop, and fees.
3. Mix chicken, cream, chicken broth, tacos, mayonnaise, 3 / 4 Cheddar cheese and salt and pepper in a bowl.
4. Grease a 9×9 pan.
5. Place 2 tortillas in the bottom of the pan.
6. Top with chicken mixture.
7. Repeat until all tortillas are gone. Note: The last layer should be 2 tortillas.
8. Place drained Rotel and the remaining cheddar cheese on top.
9. Cover with foil and bake 45 minutes.
10. Remove the foil and under broiler for 3-5 minutes.
11. Garnish with chopped spring onions.
Tips from Chef Bek:
* To avoid overheating of cooking chicken.
* If Rotel is not available, use a can of Mexican stewed tomatoes.

Black Bean Corn Salsa Recipe

Salsa is not easily served by traditional tortillas. This black bean sauce, corn is a great addition to any meal or dish. Best of all, it is a site of fat calories and is low.

* 1 can of black beans – drained and rinsed
* 1 can corn – drained
* 1 / 2 cup red onion
* 1 / 4 cup diced jalapeno peppers
* 1 / 2 cup chopped coriander
* 1 / 4 cup lemon juice fresh
* 2 large tomatoes – diced
* 2 garlic cloves – chopped
* Salt and pepper to taste
Directions:
Wash all vegetables, drain all canned food, and cut as described. Place all ingredients in a plastic or glass.
Cool in the refrigerator for at least 8 hours or overnight before serving.

Do not use metal containers to hold the sauce. The acids in lemon juice and tomatoes will react with the metal.
Suggestions:
* Serve with warm tortillas.
* Serve as a dip for fresh fish.
* Wrap in a tortilla with hot chicken, avocado and lettuce.
* In an omelet breakfast place.
* Added a bed of greens with crushed corn chips.
